That Arbelaitz family have a simple policy which they apply in the everyday running of their restaurant: the chef’s personality, based on traditional dishes, must always prevail over the dictates of fashion or the whims of different restaurant guides.

The restaurant stands in the oldest farmhouse in the valley (nearly 600 years old). The large dining rooms are in the former stables, while the private dining rooms are in what used to be the bedrooms. The decor is elegant and discreet, and the service exquisite.
